Zillinger Johannes

Johannes Zillinger, born in 1980, is a young talent from the Austrian area of Kellerberg. In 2000, he decided to inherit the family business and impose his idea and philosophy regarding vineyard management and respect for the land. In reality, Johannes does nothing but maximize his father Hans's old thinking, who, already in the 1980s, advocated for organic farming before it became a common practice worldwide. It is no coincidence that in 1984 he obtained organic certification, becoming one of the first organic realities in the entire area. The family winery dates back about 350 years and still retains the charm of that ancient tradition that binds the Zillingers to this land. We find ourselves in the heart of the Lower Austria district, in the northeastern area of Weinviertel, more precisely in the tiny municipality of Velm-Götzendorf. The area is historically suited for vine cultivation; in fact, it is made fertile by the Morava River, a tributary of the Danube that marks the borders of Austria and Slovakia, is influenced by strong temperature fluctuations and features a soil rich in organic matter, composed of Loess and sandstones.

In 2013, the Johannes Zillinger winery obtained Demeter biodynamic certification, thus embracing the almost mystical principles of highly sustainable agriculture for the environment. The cultivated varieties are those typical of Austria: Riesling and Veltiliner above all, followed by Scheurebe, Chardonnay, and Zweigelt. Johannes has a very sensitive and respectful approach towards the territory; he cultivates various herb varieties in the vineyard to protect the vines, thus avoiding the use of pesticides, fertilizers, and herbicides. In the winery, spontaneous fermentations with indigenous yeasts are carried out, limiting invasive processes such as filtration or clarification, allowing the liquid to mature in steel, old wooden barrels (sometimes even using the solera method) or amphorae.

The wines of Johannes Zillinger are produced using ancestral methods in full respect of the ancient family tradition. They are pure, fresh, and direct expressions that tell the story of a territory with a unique and genuine straightforwardness, allowing all the finesse and minerality that characterizes the Austrian lands to emerge.
