The 'Les Sources' from Chateau Jean Faux is a Bordeaux Rouge Superieur that masterfully embodies the most typical characteristics of this appellation. It is produced in Sainte-Radegonde, just a few kilometres from the Saint-Emilion appellation, on the right bank of the Garonne River, where Merlot reigns supreme. An ancient Chateau, where Pascal Collotte and his family settled in 2002, forming a deep and sincere emotional bond with this land.
This Bordeaux Superieur is crafted from a typical blend of the region, where Merlot plays the leading role, accompanied by a small percentage of Cabernet Franc. The grapes are cultivated following certified organic and biodynamic agriculture principles on clayey and limestone soils with exposures to the south and southwest. In the cellar, the same non-interventionism adopted in the vineyard is followed, allowing the grapes to ferment spontaneously with only the addition of naturally occurring yeasts on the skins in temperature-controlled steel vats. Malolactic fermentation takes place in Saury barrels, 10% of which are new, where the wine will also undergo ageing for at least 12 months.
