The Mann family has been involved in viticulture since the late 17th century, and today's winery turns out to be dug underground in volcanic rock, the same rock that characterizes the area's soils from which Andreas derives wines that purely reflect his perfectionist style and the exceptional vocation of the terroir.
Weingut Mann's Chardonnay 'Kirschyard' is a 100% Chardonnay grown according to the dictates of organic and biodynamic farming on soils rich in volcanic porphyry and limestone. The grapes are harvested by hand and then gently pressed, with the resulting must placed in steel tanks for alcoholic fermentation conducted exclusively by indigenous yeasts. The ensuing aging period takes place in large oak barrels, where the mass rests for 12 months before bottling. Throughout the process, the liquid is not subjected to any clarification or filtration.
