The Spumante 36 by Casa Caterina is an elegant brut sparkling wine produced according to the Traditional Method. It is intense and rich in aromas, with notes of citrus, spices and yellow fruits. The taste is smooth and creamy, well-balanced and very persistent.
The Metodo Classico Brut "36" is the splendid 'calling card' of Casa Caterina, a winery capable of producing some of the best Italian sparkling wines. In a personal ranking of Italian classic method producers of the heart, capable of competing blindly with their more noble cousins from Champagne, Casa Caterina certainly has a rightful place. It is then difficult to forget its 'frontman' Aurelio del Bono once one has met him, a passionate giant owner of 7 hectares of vineyards in Monticelli Brusati, the very heart of Franciacorta. The intention is to produce unique expressions, difficult to forget, and to pursue this they choose the path of perfect ripening of the grapes but above all of very long ageing on the lees, ranging from 36 months to even over 100. Sip it and you won't ever come back.
Casa Caterina's Brut Spumante Metodo Classico "36" is a sparkling wine that is aged for a long time on the lees. In the vineyard, the aim is to have a healthy fruit, as intact as possible, with full ripening. The base wines ferment spontaneously in steel, and are then blended for the re-fermentation in the bottle typical of the classic method. The liquid is hardly dosed and contains no added sulphites.
The "36" Spumante Metodo Classico Brut by Casa Caterina has a luminous, fairly intense straw yellow colour. It is undoubtedly Aurelio's simplest and least rich wine, but no less interesting for that. The nose presents hints of lime, jasmine, citrus and tropical fruit, always elegant and never caricatured. The sip is full and textural like all Casa Caterina wines, but slimmer than its older brothers, making it a wine for more carefree and transversal consumption. A ductile liquid, to be spent on almost any fish-based appetiser and first course.
