CHAMPAGNE BRUT BLANC DES BLANCS 'LE NOMBRE D'OR SABLÉ' AUBRY 2018 DESCRIPTION

Aubry's Champagne Brut Nature Blanc des Blancs 'Le Nombre d'Or Sablé' is a Champagne of exceptional refinement and minerality, the result of the encounter between Chardonnay and the so-called cépages oubliés Arbanne and Petit Meslier. The term 'cépages oublies', literally 'forgotten vines', refers to those Champagne varieties that are allowed in the specification but are scarcely widespread. In fact, in addition to the three classic and well-known Champenoise vines, i.e. Chardonnay, Pinot Noir and Pinot Meunier, the AOC admits four other varieties, which together account for just 0.3% of the entire vineyard area and are therefore called forgotten vines. These are Pinot Gris, Pinot Blanc and, indeed, Arbanne and Petit Meslier.

Aubry 'Le Nombre d'Or Sablé' Champagne Blanc des Blancs Brut Nature consists of a blend of Chardonnay (40%), Arbanne (30%) and Petit Meslier (30%) grapes, varieties cultivated in the Montagne de Reims area, particularly in the Premier Cru villages of Villedommange, Pargny-lès-Reims, Jouy-lès-Reims and Coulommes-la-Montagne. In the cellar, the grapes are vinified in white with complete malolactic fermentation and, once ready, the sparkling wine base is bottled with the addition of the liqueur de tirage for re-fermentation in the bottle according to the Champenoise Method. Maturation on the lees in glass lasts for about 36 months and the sparkling wine is finally marketed without dosage, as Brut Nature. The term 'Sablé' then refers to the lower atmospheric pressure in the bottle compared to the norm, giving a creamier sensation on the palate.

Aubry's Brut Nature Champagne 'Le Nombre d'Or Sablé' Blanc des Blancs has a straw yellow colour with a light, creamy perlage. The elegant aromatic bouquet offers hints of flowers, bergamot and ginger, combined with fragrant bakery sensations and a fine mineral vein. The sip is refined and balanced, with avery subtle effervescence that enhances the beautiful minerality.
