The Bourgogne Rouge Hautes Cotes des Nuits is a fresh, young, and expressive red wine made from Pinot Noir, aged for over 12 months in small oak barrels. It expresses itself immediately in a fruity and underbrush bouquet. The sip is refreshing, round, and fruity, with good persistence

The red wine Bourgogne Hautes Cotes des Nuits from Domaine des Chambris comes from a small production crafted by Pierre Laurent, founder and owner of this vibrant production reality, active since 2001. The winery is located in Chevanne, but the Pinot Noir vineyards are all in the nearby municipality of L’Etang Vergy, once a possession of the counts of Vergy, who had a sumptuous castle here.

This Bourgogne Hautes Cotes des Nuits Rouge is made solely from Pinot Noir grapes, rooted in hilly limestone-clay soils at an altitude of 300 meters, facing southwest. The vines are about 30 years old and are trained in double guyot. In the winery, vinification is carried out in accordance with tradition, with fermentation on the skins in steel for over 20 days and subsequent racking. After a natural clarification, maturation continues for 12-15 months in small barrels of French oak, of which 20% are new. Despite the aging in wood, the Pinot Noir from this area tends to express itself with remarkable expressiveness that, on the palate, makes it very fresh, slender and youthful.

The Domaine des Chambris Bourgogne Hautes des Nuits Rouge is characterized by its immediate drinkability and the crunchiness of the fruit. Its bouquet is composed of cherries and small red fruits such as raspberry, currant, and blueberry, to which are added subtle spicy notes of underbrush. The sip reveals that fresh and subtle elegance typical of Burgundy wines, combined in this case with a delicacy that makes it gastronomic, pleasant, and immediate. The tannins are round and softened, barely perceptible on the finish. The producer recommends pairing it with roast chicken, but it can also be matched with great results to many homemade preparations, from first courses to cold cuts, not forgetting meat grills.
