"Le Souffle de la Lune" from Le Mas De La Lune is an original white wine with character, offering a glimpse into little-known but solidly tempered grapes with enveloping aromas. The terroir from which it comes is, after all, extremely suited to bearing important fruit: the Roussillon is enlivened by the presence of the Mediterranean and the Pyrenees, in a climate that is among the warmest and sunniest in France. Vanessa and Mathieu dedicate this breath of the moon to their new life in contact with nature, after abandoning their previous city life.
"Le Souffle de la Lune" is made by Domaine Le Mas De La Lune from two white grapes typical of the south of France, one better known and the other not at all: Macabeu, strongly driven toward aromaticity, and the rare Grenache Gris, rich in structure. The grapes are biodynamically farmed and grow on rocky soils, characterized by the strong presence of shale and sandstone marl. The vineyards are located about 300 meters above sea level in the Val de l'Agly area: we are inland from Perpignan, the last major French city before the Spanish border. Harvesting is done manually at full maturity, with grape picking in small crates. In the winery, the grapes are vinified in steel, with a short maceration on the skins and then gently pressed. Fermentation is spontaneous, thanks to the work of only indigenous yeasts, while aging takes place for two-thirds of the mass in steel tanks and one-third in third-passage French oak barriques, over a period of 3 months. Bottling proceeds without filtration or clarification.
"Le Souffle de la Lune" from Domaine Le Mas De La Lune is characterized by a straw-yellow color with bright golden hues. The aromas are intense and recall both the sea on the horizon and the rocks of the soil: sunny notes of aromatic herbs and Mediterranean scrub mingle with the sweetness of ripe yellow fruit and the tartness of citrus, closing on spicy references. A good balance is also revealed on the palate, where the soft notes of dense structure meet the sensations of lively freshness and subtle salinity. An intense and tasty white, to be paired with smoked fish, fresh cheeses, pastas with fish sauce.
