Elena Walch winery realizes this Beyond The Clouds as a prestigious cuvée, in which are found all the white berried grapes cultivated in its own vineyards, with a prevalence that, in the final blend, is up to Chardonnay. The different grapes, after harvesting, ferment together in steel, remaining on the lees for about 3 months; then the phase of aging, first in French oak barrels for 10 months, and then, after bottling, for another 6 months directly in glass.
