Beyond The Clouds where only the most ambitious and capable producers aim to venture: surely Elena Walch succeeds with this wine from Alto Adige, result of a wise blend that contains a global vision of white grapes grown within the vineyards. A label where personality, territory, and intense aromas are combined with the aspiration of a woman of wine who has managed, with her own winery, to establish herself as one of the reference name of the region, also thanks to the modern wine making techniques used.
Elena Walch winery realizes this Beyond The Clouds as a prestigious cuvée, in which are found all the white berried grapes cultivated in its own vineyards, with a prevalence that, in the final blend, is up to Chardonnay. The different grapes, after harvesting, ferment together in steel, remaining on the lees for about 3 months; then the phase of aging, first in French oak barrels for 10 months, and then, after bottling, for another 6 months directly in glass.
Elena Walch’s Beyond The Clouds is a white wine that, when viewed, takes on an intense golden hue. The aromatic bouquet that appears to the nose is complex and stratified, with notes of exotic fruit and flower petals that alternate with slight toasted hints, resulting from the aging in wood. The mouthfeel is full-bodied, with a soft, fine and elegant sip, in which is found a nice savory component; it ends with a persistent finish. Beyond The Clouds is a white wine that exceeds expectations, always being the protagonist on every table; an ideal bottle to give, as an incentive for all those people who are not afraid to exceed their limits.
